Day 2 - Tuesday 2nd December 2008




Made a really delicious fruit salad last night that has finely chopped almonds, cashews, pepitas and sunflower seeds in it, along with the fruit (of course). Have just finished eating the last of what was left over from lunch and boy was it yummy, to say the least.

My food consumption was pretty much the same as yesterday, except instead of the actual salad for lunch, I chopped up vegies in chunks and sticks. Celery, Carrot, Cucumber, Lettuce, Tomato, I served more like finger food, so I could pick throughout the day. Generally whatever I prepare for the day, is eaten as I feel like it. For example at around 10.30am this morning I felt like celery and carrot sticks, so had a few and then the container went back in the fridge. Half an hour later I felt like some fruit, so out came the fruit salad. I'm finding that I tend to snack more throughout the day (while at the same time, not eating more, just more frequently), rather than sitting down to the traditional breakfast, lunch and dinner.

Found a food dehydrator on the net today, so should have that in about a week or so. That will make my meals very interesting and can't wait to share my experiences.

Went to weigh myself yesterday so I can check my progress over the course of the coming weeks/months, discovered the battery was flat. Electronic scales! Give me the old style any day. So seeing I can't get to a shop, I'll have to settle on measurements and by feeling the fit of my clothes. Will get hubby to take a photo of me tonight, so I have a before shot which I will post to this blog. Once I have reached my goal weight, I will post an updated photo, so the results can be seen.

Found today a little tougher, though still not too bad. Had a slight headache, feeling a little lethargic (although that can also be related to the arthritis). Generally feeling not too bad.
Well tomorrow is a new day, so until then.
